The Time Formula

When you move a dish off its intended temperature, the time moves with it. The estimate in wide use is straightforward:

New time = original time × (original temp ÷ new temp)

A gratin that wanted 30 minutes at 400°F, cooked at 425°F instead: 30 × (400 ÷ 425) ≈ 28 minutes. A casserole that wanted 45 minutes at 350°F, now at 375°F: 45 × (350 ÷ 375) = 42 minutes.

It's an estimate, not physics — real cooking time depends on the dish's density, depth, and starting temperature as much as on the oven setting. Published rules of thumb vary from "10-15% per 25°F" to this ratio, which for a 25°F change gives closer to 6-7%. Use the number as the moment to start checking, and finish on doneness cues or a thermometer rather than the timer.

Which Rack for Which Dish

Advice on this contradicts itself constantly — some sources say the top rack is hottest, others say the bottom. Both are describing something real, and the reason is that ovens deliver two different kinds of heat.

So when two dishes share an oven, put the one that wanted the higher temperature on the rack that suits what it needs from the extra heat — the bottom if it needs a crisp base, the top if it needs a browned surface. Stagger them left and right rather than stacking one directly above the other, so air can move, and swap their positions at the halfway mark since nearly every home oven has a hot side.

What Not to Compromise

Some dishes treat temperature as a structural instruction rather than a speed setting. Puff pastry needs high heat to convert its water to steam fast enough to push the layers apart. Choux needs it to set before it collapses. Soufflé and bread rely on a specific initial rise. Drop the temperature on any of these and you don't get a slower version — you get a different, worse result.

Which oven rack is hotter, top or bottom?

Both, in different ways, which is why advice on this conflicts. In most home ovens the heating element sits at the bottom, so the lower rack receives more direct radiant heat — good for crisping bases. But hot air rises, so the ambient air near the top of the cavity is generally hotter and the upper rack is closer to the broiler, which is better for browning tops.

Which dishes should never share an oven?

Anything where the temperature is doing structural work: puff pastry, pie crust, choux, soufflé, and bread that needs a specific initial oven spring. These rely on hitting an exact temperature at an exact moment, and a compromise setting changes the result rather than just the timing.
