Reheating gets treated as a trivial step, which is why so much of it goes badly. It's actually a different problem from cooking, governed by different rules, and most reheating advice fails because it doesn't acknowledge that.
Reheating Is Not Re-Cooking
This is the idea everything else follows from. When you cook raw food, high heat has a job: drive moisture off the surface so a crust can form, while the inside slowly comes up to temperature. A leftover has already been through that. Its exterior is set and dry, and its interior is fully cooked.
So the goal has inverted. You're no longer building anything — you're moving heat into the centre while doing as little further damage to the outside as possible. Apply the original cooking temperature and you overshoot the surface long before the middle is warm. That single misunderstanding produces most dry chicken, leathery steak and scorched casserole edges.
The practical version: reheat roughly 30-50°F below whatever the food was cooked at. Fried chicken cooked at 400°F comes back at 375°F. A casserole baked at 375°F comes back at 350°F. Meat you want to stay medium-rare comes back at 250°F, barely warm enough to count as an oven.
The Two Temperatures
Reheating advice constantly mixes two numbers that have nothing to do with each other, and the confusion is worth naming directly.

You set the second and verify the first. Turning an oven to 165°F because that's the number in the guidance is a real and common mistake — the food sits for an hour drying out and may never get properly hot in the middle.
Choosing the Method
Every reheating decision reduces to one question: does the surface need drying out, or protecting?

The microwave isn't bad at reheating — it's bad at texture, and it's bad at evenness. For soup it's completely fine. For pizza it's working directly against the thing you want. Why the Air Fryer Is So Good at This
An air fryer is a small convection oven with a strong fan, and reheating is arguably what it's best at — better than cooking from raw, where its capacity limits bite. Leftovers are usually single portions, which is exactly the scale it suits, and its concentrated airflow removes surface moisture faster than a full oven can.

The Safety Layer
Reheating has genuine food safety rules, and they're short.
- 165°F internal for leftovers, steaming hot throughout. Soups, sauces and gravies to a rolling boil.
- Microwave: cover, rotate or stir partway, then stand covered for two minutes. Microwaves heat unevenly enough that this rest genuinely matters.
- Not in a slow cooker or warming drawer. These bring food up through the bacterial growth range too slowly. Use them to hold food hot after it's been properly reheated.
- Reheat once. Take out only the portion you'll eat; each reheat-and-cool cycle sends the rest back through the danger zone.
- 3-4 days in the fridge, then freeze. Frozen leftovers can be reheated without thawing.
The one that catches people: reheating does not undo the 2-hour rule. Food left at room temperature too long isn't rescued by getting hot later, because some bacteria produce toxins that heat doesn't neutralize. That's a discard decision, not a reheating decision.
