The Number on the Pot Isn't the Number You Can Use
Cookware capacity is measured to the rim. Nobody cooks to the rim. The working figure is roughly two-thirds of the stated size for anything that boils or needs stirring — so an 8-quart pot is really a 5⅓-quart pot in practice, and a 12-quart is about 8.
That gap catches people out most often when doubling a recipe. The ingredients scale cleanly on paper, the pot doesn't, and you find out at the stove.

Different Dishes, Different Fill Lines
Two-thirds is the general rule, but what's in the pot changes how much headroom it actually needs.

Pasta Is Sized by Water, Not by Dinner
Every other dish on this page is sized by the finished food. Pasta isn't — it's sized by the water it cooks in, and that water is several times the volume of what ends up on the plate. Plan roughly 4 quarts of water per pound of dry pasta, then pick a pot half again as large so the starch foam has somewhere to climb.
So a pound of pasta needs 4 quarts of water and therefore a 6-quart pot at minimum, even though it's only feeding four people. That's the same pot you'd use for soup for ten.
Why a Too-Full Pot Cooks Badly
Overfilling isn't only about mess. A pot filled past its working line takes noticeably longer to come to temperature, because there's more mass to heat and less surface area relative to it. That extra time matters for anything where texture depends on getting hot quickly.
It also heats less evenly. The bottom sits directly on the burner while the top is insulated by everything beneath it, so thick stews scorch underneath before the top is properly hot — and you can't stir vigorously enough to fix it, because there's no room to stir. Splitting across two pots is almost always better than crowding one.

What size pot do I need for soup for 6 people?
A 6-quart pot covers it with room to spare. Six servings of soup at about 1½ cups each is 9 cups, or 2¼ quarts of finished soup, and a 6-quart pot safely holds around 4 quarts. An 8-quart pot is the more flexible single purchase if you also make stock or cook pasta.
Why does my soup boil over even when the pot looks half empty?
Starch and fat create foam that rises far above the liquid line, and it happens fastest with pasta, beans, rice and milk-based soups. The liquid level is not the thing that overflows — the foam is. Leaving a third of the pot empty gives that foam somewhere to go.
Can I double a recipe in the same pot?
Only if the doubled volume still lands under the safe fill line. Work out the finished volume of the original recipe, double it, and compare it against roughly two-thirds of your pot's stated capacity. If it doesn't fit, split it across two pots rather than crowding one — a too-full pot heats unevenly and takes far longer to come up to temperature.
