Roasting vegetables looks like it should be the simplest thing in the kitchen, and it mostly is — until you put two different vegetables on the same pan. Then you're managing four variables at once, and published charts contradict each other because most don't say which conditions they assume.

The Four Variables, in Order of Impact

Most people reach for time first and crowding last, which is exactly backwards. Adding ten minutes to a crowded pan gives you vegetables that are steamed and overcooked. Fix the pan before you touch the timer.
Variable 1: Crowding
Vegetables release a lot of water as they heat. On a pan with gaps, that steam escapes and the surfaces dry out enough to brown. On a packed pan it sits between the pieces and cooks them in their own moisture — the same physics that separates an air fryer from a full oven, where a crowded basket produces the same pale result for the same reason.
Single layer, visible gaps, and a second pan rather than a taller heap. Two pans means swapping their rack positions halfway, since nearly every home oven has a hotter shelf. Wet vegetables get patted dry first, because surface water has to boil off before browning can start.
Variable 2: Cut Size
Roasting time follows the thickness of the piece far more than the identity of the vegetable. A potato in ¾-inch cubes takes about 35 minutes; the same potato in ½-inch cubes is closer to 25. That makes cut size the most direct tool for getting mixed vegetables to finish together — cut the dense one smaller and the soft one chunkier, and a 12-minute gap can close to nearly nothing.
It also means any chart without a stated cut size is only half a number. Every time in this cluster names the cut it assumes.
Variable 3: Temperature

Variable 4: Time, and the Four Groups
Twenty individual times is more than anyone remembers. Four density groups is manageable, and vegetables inside a group share a pan with no adjustment at all.

Mixing Groups: The Subtraction
Cross group boundaries and you need staggering. The rule is one subtraction: each vegetable goes in when the time remaining equals its own roasting time. Potatoes at 35 minutes and asparagus at 12 means the asparagus is added at minute 23.

Diagnosing a Bad Result

Roasting Compared With Other Methods
Roasting is dry heat: moisture leaves the surface and browning follows. Boiling and steaming are moist heat and cannot brown at all, which is why the same carrot tastes sweeter roasted — caramelization only happens on a dry surface above the boiling point of water.
