Every protein swap question comes down to a single check: do the two proteins share the same safe internal temperature? If they do, swapping is mostly a matter of adjusting time for size or shape. If they don't, the two proteins were never really interchangeable — you need the new protein's own time and temperature from scratch, not an adjustment to the old recipe's numbers.

Why "Same Temperature" Doesn't Always Mean "Same Time"

Three of the five pairs above share an identical safe temperature, yet none of them are true 1:1 swaps for time. That's because safe temperature and cook time are decided by two different things: temperature is about the pathogen the protein carries, while time is about how far heat has to travel to reach the center. A shrimp and a salmon fillet both stop at 145°F, but a shrimp is a fraction of the thickness, so it gets there in minutes instead of over ten. A turkey breast and chicken breast both stop at 165°F, but conventional wisdom cooks them at different oven temperatures entirely — 400°F for the small piece, 325°F for the large one — because a hot oven would scorch the outside of a turkey breast long before the center caught up.

When the Temperature Itself Is Different

Bacon and sausage are the one pair here where the underlying safety number changes — 145°F for cured bacon versus 160°F for raw ground sausage. This isn't a size or convention difference; it reflects that sausage is raw ground meat (bacteria can be distributed throughout, not just on the surface) while bacon is already cured. When two proteins have genuinely different safe temperatures like this, there's no shortcut — treat the swap as a completely different dish and look up the new protein's own numbers.
