Deep frying has a reputation for being difficult, and it mostly isn't. It has one dominant variable, and nearly every failure — greasy food, soggy crust, burnt outside with a raw middle — traces back to it.
Everything Is Downstream of Oil Temperature
Hot oil crisps food by flashing the moisture at its surface into steam. That outward rush of steam is what keeps oil from moving inward, and it's why properly fried food absorbs remarkably little fat — the crust forms before the oil gets a chance.
Let the oil fall below its target and that sequence collapses. The crust forms slowly, the steam barrier is weak, and the food sits in oil far longer than intended, absorbing it the whole time. Greasy fried food is a temperature failure, not an oil-quality failure.
Which means the real question isn't "what temperature" — it's "what makes the temperature fall?" Two things: too much food at once, and not enough oil to buffer it.
The Four Decisions, in Order

Most people start at decision 3 and never make decisions 1 and 2 deliberately at all — which is precisely why the temperature they carefully set doesn't hold.
Decision 1: Oil and Pot
The food needs 2 to 3 inches of oil to float freely. The pot needs to be no more than half full, because oil rises when food displaces it and foams higher still as moisture escapes — a two-thirds-full pot can push hot oil onto a live burner.

Decision 2: Batch Size — the One Nobody Computes
Every frying guide says "don't overcrowd the pot." Almost none of them says how much that is, which leaves the most important decision to guesswork.
The working figure is a food-to-oil ratio of about 1:6 by volume, a proportion shown to minimise how long the oil takes to recover its temperature. Six cups of oil supports roughly one cup of food per batch; eight cups supports about one and a third. That is less food than most people expect, and the gap between expectation and reality is where greasy results come from.
For scale, Oklahoma State University Extension reports that a full product load into a commercial batch fryer drops the oil roughly 86 to 104°F, and further for frozen food. Decision 3: Temperature
Frying runs 325°F to 375°F, and where a food sits comes down to one question: does the interior need real cooking time, or is it already cooked?

Decision 4: Doneness
For battered and thin items, the cues are reliable: vigorous bubbling slows as surface moisture cooks off, most battered items float, and colour deepens to gold. For bone-in chicken and anything thick, use a thermometer — the crust reaches its finished colour long before the centre reaches 165°F, and colour tells you nothing useful about the interior. Why Some Foods Are Fried Twice
A thick-cut chip has two incompatible needs: the potato must cook through, which wants moderate heat and time, and the outside must crisp, which wants high heat and speed. One pass gives you a raw centre or a burnt shell.
Splitting solves it. The first fry at 325°F cooks the potato and drives off surface moisture without colouring it; the food can then rest, even for an hour. The second at 375°F builds the crust in two or three minutes. The rest between fries is part of the method, not a convenience — and it's why restaurant fries are crisp.
Safety, Briefly
- Half full, no more. The single most important rule. Oil rises and foams when food goes in.
- Never add wet food. Pat dry. Water hitting hot oil spatters violently.
- Frozen food: shake off loose ice and lower it in rather than dropping it. Don't thaw first — thawing leaves the surface wetter.
- Never move a pot of hot oil, and never leave it unattended.
- Never use water on an oil fire. Smother it — lid on, heat off. Keep a lid within reach before you start.
- Never pour oil down a drain. Cool it, seal it in a container, bin it or recycle it.
Altitude Changes the Target
Frying is one of the methods elevation genuinely affects. Moisture escapes the food faster in thinner air, so at a normal temperature the outside browns before the inside is ready.
