These ranges assume roughly 1 to 1¼ hours per pound at 275°F, or about 1½ hours per pound at the slower 250°F. A large brisket (10 lb+) is easier to manage cut into two smaller pieces and cooked as if each were its own roast — it's genuinely hard to cook a whole one evenly. Keep the oven no higher than about 325°F; going hotter to save time risks burning the exterior before the interior's connective tissue has broken down.

Why Brisket Needs a Much Higher Internal Temperature

Most beef roasts are done well before 200°F — a medium-rare roast is pulled around 130-135°F. Brisket is different because it's loaded with collagen, a tough connective protein that doesn't break down until it spends significant time above roughly 195°F. The "stall" deserves its own mention: somewhere in the 160-170°F range, brisket's internal temperature often plateaus for an hour or more as moisture evaporating from the surface cools the meat, counteracting the oven's heat. This is normal, not a sign anything went wrong — resist the urge to raise the oven temperature to push through it, since patience (or wrapping the brisket in foil to trap steam and push past the stall faster) is the standard fix.

Fat Side Up or Down?

For oven cooking, fat side up is the more common recommendation — as the fat renders, it bastes the meat from above, helping keep it moist through the long cook. Either orientation works with attentive basting; what matters more is not skipping the fat cap entirely, since it's protecting the meat underneath from drying out.

Resting Before Slicing

Rest brisket for at least 15-30 minutes, tented loosely with foil, before slicing — cutting into it immediately lets the juices run out onto the cutting board instead of staying in the meat.
