How to Use This Converter

Because slow cooker recipes are usually written for Low, the converter accepts either setting and handles the Low-to-High step for you.

Why Pressure Cooking Is So Much Faster

A sealed pressure cooker traps steam, which raises the internal pressure and, with it, the boiling point of water. Instead of topping out at 212°F the way an open pot does, the environment inside reaches roughly 250°F at high pressure. That higher temperature drives the same connective-tissue breakdown that makes slow cooking work, but it does the job in a fraction of the time — which is why an 8-hour braise compresses into well under half an hour of actual cooking.

This is the mirror image of what a slow cooker does. A slow cooker's Low setting runs around 190-200°F and High around 290-300°F, both relying on long exposure at gentle heat. A pressure cooker gets to a higher temperature than either and simply spends far less time there. Both end up in the same place for tough cuts; they just take opposite routes.

The Time the Converter Doesn't Show You

The single most common surprise when switching from a slow cooker is that pressure cooking minutes are not the same as clock minutes. The cooking time only begins once the pot has actually reached pressure, and getting there takes 5 to 20 minutes depending on how full the pot is, how cold the contents are, and how much liquid is inside. Releasing the pressure adds more: a quick release vents in a couple of minutes, while a natural release can take 10 to 20 minutes as the pot cools on its own.

In practice, budget roughly 20 to 40 minutes of extra clock time on top of whatever cooking time this converter gives you. A recipe that converts to "25 minutes" realistically occupies closer to an hour from start to serving. That's still dramatically faster than eight hours in a slow cooker, but it matters if you're timing side dishes — and it's the reason a 6-minute pressure time doesn't actually mean dinner in 6 minutes.

Which release you use isn't only about time, either. Natural release lets the food continue cooking gently as pressure drops, which suits large cuts of meat and anything you want to stay tender. Quick release stops the cooking abruptly, which is what you want for vegetables, seafood, and pasta that would otherwise overshoot. If a recipe specifies one, the timing assumes it.

What to Change Besides the Time

Liquid usually goes up, not down. This trips up people who have learned to cut liquid for the slow cooker. A slow cooker traps moisture and needs less added liquid than an oven recipe; a pressure cooker also traps moisture, but it needs a minimum volume of thin liquid to generate steam in the first place — commonly about 1 cup for a 6-quart pot and 2 cups for an 8-quart, though your manual is the authority. A slow cooker recipe that relies on a roast's own juices may not clear that minimum.

Thick sauces go in at the end. Tomato paste, cornstarch slurries, roux, and heavy dairy can scorch on the bottom or trigger a burn warning, and dairy can separate under pressure. Pressure cook with thin liquid, then stir the thickeners in afterwards using the sauté function.

Nothing reduces in a sealed pot. A slow cooker loses a little moisture over eight hours; a pressure cooker loses essentially none. If the original recipe expected the sauce to concentrate, it won't — plan to simmer it down uncovered after cooking.

Delicate ingredients go in late. Quick-cooking vegetables, fresh herbs, and seafood turn to mush at the times that tough cuts need. Cook the long-cooking components first, release pressure, then add the delicate ones for a short second cook or just to warm through.

Stovetop vs Electric, and Altitude

Almost every pressure cooking time you'll find online — including the ones on this page — assumes an electric pressure cooker such as an Instant Pot. Stovetop pressure cookers generally operate at a higher PSI, so they run hotter and finish sooner. A reasonable starting adjustment is to trim about 15% off the cooking time for longer cooks and check early; for short cooks of only a few minutes the difference is usually small enough to ignore.

Elevation works the other way. Because water boils at a lower temperature as altitude rises, the pot reaches a lower actual cooking temperature even at the same pressure setting. The common adjustment is to add roughly 5% to the cooking time for every 1,000 feet above 2,000 feet — so at 5,000 feet a 20-minute cook becomes about 23 minutes, and at 8,000 feet closer to 26.
